  • 12 oz flank steak (or sirloin) Thinly sliced against the grain
  • 2 cups mixed vegetables (bell peppers, broccoli, and snap peas) Chopped into bite-sized pieces
  • 3 tablespoons soy sauce Low sodium recommended
  • 2 tablespoons oyster sauce Optional for added depth
  • 1 tablespoon cornstarch For thickening
  • 2 teaspoons sesame oil or vegetable oil
  • 2 cloves garlic Minced
  • 1 piece thumb-sized piece of ginger Minced
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa For serving

Preparation

  • Start by thinly slicing the flank steak against the grain for maximum tenderness.
  • Wash and chop your mixed vegetables into bite-sized pieces.

Marinate the Steak

  • In a medium bowl, combine the sliced steak with soy sauce, cornstarch, and a pinch of salt and pepper. Allow it to marinate for about 10 minutes.

Sauté Aromatics

  • In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add minced garlic and ginger, stirring for about 30 seconds until fragrant.

Cook the Steak

  • Add the marinated steak to the skillet, spreading it out in an even layer. Cook for about 3-4 minutes without stirring to achieve a nice sear. Flip the steak and continue to cook for an additional 2-3 minutes until fully cooked.

Add Vegetables

  • Toss in the mixed vegetables and stir-fry for about 5-7 minutes, until cooked yet crisp.

Combine Sauces and Serve

  • Add any remaining soy sauce, oyster sauce (if using), and mix well. Cook for another 1-2 minutes for the sauce to thicken.
  • Serve over cooked rice or quinoa.

Notes

For a lighter version, consider using leaner cuts of meat or spiralized vegetables instead of rice or quinoa. Store leftovers in an airtight container for up to 3 days.
