  • 1 cup Dried Navy Beans The heart of the soup, cooks to a creamy texture.

  • 2 stalks Celery Enhances overall flavor; leeks can be substituted.
  • 3 cloves Garlic Use garlic powder if fresh is unavailable.
  • 6 cups Vegetable or Chicken Broth Homemade or store-bought works well.
  • 2 leaves Bay Leaves Infuses earthiness; remove before serving.
  • 1 teaspoon Dried Thyme Fresh herbs can be used for a vibrant taste.
  • 1 teaspoon Salt Essential for seasoning.
  • 1 teaspoon Black Pepper Use to taste; smoked paprika adds a nice touch.

Optional Add-ins

  • 1 cup Cooked Bacon or Ham For added flavor.

Instructions
 

Preparation

  • Rinse the dried navy beans under cold water and soak them overnight in a large bowl with enough water to cover them by a couple of inches.
  • In a large soup pot, heat a splash of olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cooking

  • Drain the soaked beans and add them to the pot, followed by the broth, bay leaves, thyme, salt, and pepper. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 40 minutes, or until the beans are tender.
  • Once the beans are cooked, taste the soup and adjust the seasoning as needed. Remove bay leaves before serving.

Serving

  • Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy immediately with crusty bread or cornbread.

Notes

For a kick of heat, consider adding diced jalapeños or crushed red pepper flakes. You can also make it vegetarian by skipping the meat.
