  • 1 cup Dried beans (navy or pinto) Provides protein and texture.

Preparation

  • Rinse your dried beans under cold water. If you have time, soak them overnight to reduce cooking time. If not, a quick soak in boiling water for an hour will do.
  • In a large pot, heat a drizzle of oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5-7 minutes until softened and aromatic.
  • Stir in the minced garlic and let it cook for an additional minute until fragrant.
  • Drain and rinse the soaked beans. Add them to the pot along with the broth, bay leaves, salt, and pepper. Stir everything together.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 1 hour, checking occasionally and stirring gently.
  • Once the beans are tender, taste and adjust the seasoning. Remove the bay leaves before serving.
  • Ladle the soup into bowls and, if desired, top with fresh herbs or a sprinkle of cheese.

Notes

For added flavor, let the soup sit overnight before serving. Leftovers can be stored in an airtight container for up to 4 days.
