  • In a large pot, cook the bacon over medium heat until crispy. Remove and chop into bite-sized pieces, leaving the drippings in the pot.
  • Add the onion to the pot, cooking until translucent. Stir in the garlic and sauté for another minute until fragrant.
  • Pour in the chicken broth and bring the mix to a gentle boil.
  • Stir in the gnocchi and let them cook for about 2-3 minutes or until they float to the top.
  • Lower the heat, add the heavy cream, and stir until combined.
  • Gradually mix in the cheddar cheese until it melts into the soup.
  • Add the fresh spinach, allowing it to wilt for a minute.
  • Season with salt and pepper to taste, then ladle into bowls and top with the reserved crispy bacon.

Notes

Try adding veggies like corn, carrots, or mushrooms for extra nutrition. For a kick, toss in some crushed red pepper flakes. Swap heavy cream for cashew cream for a lighter option.
