  • 1.5 pounds Boneless, skinless chicken breasts, cut into 1-inch bite-size cubes Chicken thighs can be used for juicier bites.
  • 12-16 slices Thinly sliced bacon, cut in half Turkey bacon or center-cut bacon for lower fat.
  • 1 tablespoon Olive oil To coat the chicken.
  • 1 teaspoon Smoked paprika For warm, smoky depth.
  • 1/2 teaspoon Garlic powder To add savory richness.
  • 1 tablespoon Brown sugar Optional for a caramelized glaze.
  • Salt and freshly ground black pepper To taste.
  • Toothpicks To secure each wrapped bite.

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top.
  • Toss the chicken cubes with olive oil, smoked paprika, garlic powder, brown sugar (if using), salt, and pepper.
  • Wrap half a slice of bacon around each chicken piece and secure with a toothpick.
  • Place the wrapped bites on the rack with the seam side down.

Cooking

  • Bake for 12 minutes, then flip each bite and bake for another 6-10 minutes until the bacon is crisp and chicken is cooked through.
  • Broil for 1-2 minutes for extra crispiness, watching closely.
  • Let the bites rest for 3 minutes before serving.

Notes

Use thin bacon for crispiness and don't overcrowd the rack while baking. For variations, try using different spices or adding cheese inside the bites.
