For the Cod

  • 4 fillets cod fillets (about 6 oz each, fresh or frozen—just ensure they are fully thawed) Use the freshest cod for best results.
  • 1 cup panko breadcrumbs For that delightful crunch.
  • 3 tablespoons unsalted butter (melted) The rich flavor makes a difference.
  • 3 cloves garlic (minced) The more the merrier!
  • 1 tablespoon fresh parsley (chopped) Or swap with dill for a different flavor.
  • 1 tablespoon fresh lemon juice Zesty and bright.
  • to taste Salt and pepper Don’t skimp; season generously!

Preparation

  • Preheat your oven to 400°F (200°C).
  • Lightly grease a baking dish with cooking spray or olive oil.
  • Place the cod fillets in the dish and sprinkle generously with salt and pepper.
  • In a bowl, combine panko breadcrumbs, melted butter, minced garlic, parsley, lemon juice, salt, and pepper. Mix well until all the breadcrumbs are coated.
  • Spoon the breadcrumb mixture over each cod fillet.

Cooking

  • Place the dish in the oven and bake for 15-20 minutes until the fish is opaque and flakes easily with a fork; the topping should turn a lovely golden brown.
  • Let it rest for a couple of minutes before serving.

Serving

  • Serve alongside a fresh salad or your favorite roasted vegetables.

Notes

Add a sprinkle of fresh herbs before serving for enhanced flavor. For variations, consider adding Parmesan cheese, cayenne pepper, or seasonal herbs.
