  • 4 pieces Boneless and skinless chicken breasts
  • 1 cup Grated Parmesan cheese Freshly grated for richer flavor if preferred.
  • 1 cup Bread crumbs Panko may be used for extra crunch; gluten-free options work well too.
  • 5 tablespoons Olive oil 3 tablespoons for mixture, 2 for drizzling.
  • 1 teaspoon Garlic powder Fresh garlic can be used for enhanced flavor.
  • 1 tablespoon Dried herbs (Italian seasoning)
  • 1 tablespoon Dried thyme
  • 1 tablespoon Dried rosemary
  • to taste Salt and pepper Season according to personal preference.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, and dried herbs. Drizzle in 3 tablespoons of olive oil and mix until it resembles wet sand.
  • Pat chicken breasts dry with paper towels; season both sides with salt and pepper.
  • Dip each chicken breast into the breadcrumb mixture, pressing lightly to ensure the coating sticks.
  • Place the coated chicken breasts on the baking sheet; drizzle with remaining olive oil.

Cooking

  • Bake in the oven for 25 minutes or until cooked through (internal temperature of 165°F) and coating is golden brown.
  • Remove from the oven, let rest for a few minutes, then slice and serve.

Notes

For a spicy kick, add a dash of cayenne pepper or red pepper flakes. Fresh herbs like basil or parsley can provide an invigorating twist, and different cheeses such as cheddar or feta can be experimented with for variation.
