Ingredients
  

For the Marinade

  • ½ cup Soy Sauce Adds a salty, umami kick.
  • ½ cup Brown Sugar Balances saltiness with sweetness.
  • 4 cloves Garlic, minced Infuses aromatic goodness.
  • 1 medium Onion, grated Adds moisture and sweetness.
  • ¼ cup Vinegar Brightens the flavors.
  • 1 tsp Black Pepper Enhances flavor profiles.

For the Skewers

  • 2 pounds Pork Shoulder or Pork Belly Choose cuts with a bit of fat for extra flavor.
  • as needed Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning.

Instructions
 

Preparation

  • In a large bowl, mix together soy sauce, brown sugar, minced garlic, grated onion, vinegar, and black pepper. Whisk until the sugar is dissolved.
  • Cut the pork into bite-sized cubes (about 1 to 1.5 inches) and add them to the marinade. Mix well to coat each piece.
  • Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

Cooking

  • Thread the marinated pork pieces onto the skewers, leaving space between each piece for even cooking.
  • Preheat the grill to medium-high heat. If using a grill pan, lightly oil it to prevent sticking.
  • Place the skewers on the grill, cooking for about 4-5 minutes on each side, or until they develop a char and the internal temperature reaches 145°F (63°C).
  • Baste with leftover marinade for extra flavor, but do not use marinade that touched raw meat.
  • Remove the skewers from the grill and let them sit for a couple of minutes before serving hot.

Notes

For extra flavor, marinate the pork for at least 4 hours or overnight. Pair with Java Rice or Ensaladang Mangga for a complete meal.
