Ingredients

For the Stir Fry

  • 1 pound flank steak (or sirloin, sliced thinly against the grain)
  • 3 cups broccoli florets (fresh or frozen) Swap with bell peppers for additional color
  • 2 tablespoons soy sauce Opt for low-sodium to keep it healthier
  • 1 tablespoon oyster sauce Substitute with hoisin sauce for a sweeter touch
  • 2 cloves garlic, minced The more, the merrier!
  • 1 teaspoon ginger, minced Fresh ginger elevates the dish beautifully
  • 2 tablespoons vegetable oil Can use sesame oil for a nutty flavor
  • 1 tablespoon cornstarch Helps thicken the sauce; feel free to use arrowroot powder
  • Salt and pepper to taste

For Serving

  • Cooked rice or noodles For serving

Instructions

Preparation

  • In a bowl, combine the slices of flank steak with 1 tablespoon of soy sauce, cornstarch, salt, and pepper. Let it marinate for at least 10 minutes while you prep the broccoli.
  • Rinse and cut the broccoli into small florets. If using fresh garlic and ginger, mince them finely.

Cooking

  • In a large skillet or wok, heat vegetable oil over medium-high heat. When the oil shimmers, it’s time for the beef.
  • Add the marinated beef in a single layer. Let it cook without stirring for about 2-3 minutes to develop a nice sear before flipping.
  • Push the beef to the side and add the broccoli to the skillet. Pour in a splash of water to create steam and cover for 2-3 minutes.
  • Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  • Add the remaining soy sauce and oyster sauce, mixing everything together until well coated. Adjust the thickness of the sauce if desired.
  • Serve the stir fry over a bed of cooked rice or noodles.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water to regain texture.
