Preparation

  • In a skillet over medium heat, brown the ground beef. Add the diced onion and your spices of choice. Cook until the onion is translucent and fragrant, about 3-5 minutes.
  • Stir in the shredded cheddar cheese until melted and combined, creating a delightful ooey-gooey filling.
  • Warm the tortillas slightly to make them pliable. Scoop a generous amount of the beef and cheese mixture onto each tortilla and fold in the sides, rolling them tightly to form burrito-like chimichangas.
  • In a deep frying pan, add oil and heat over medium-high until shimmering.
  • Carefully place each chimichanga seam side down into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side.
  • Once crispy, remove them from the oil and place on a paper towel-lined plate to absorb excess grease.

Notes

Consider adding a spicy kick with jalapeños or hot sauce to the beef mixture. For a healthier option, brush the chimichangas with oil and bake at 400°F (200°C) for 20-25 minutes. Experiment with dessert chimichangas by filling tortillas with a sweetened cream cheese mixture.
