Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy. This should take about 3–4 minutes.
  • Add the egg and vanilla extract, mixing until well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
  • Roll out the dough on a floured surface to your desired thickness (about ¼ inch is perfect) and cut shapes with cookie cutters.
  • Place the cutouts on the prepared baking sheets, leaving some space between them, and bake for about 8-10 minutes, or until the edges are lightly golden.
  • Let them cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container for up to a week at room temperature. Chill your dough if it's hard to roll and monitor the baking time as ovens may vary.
