For the Special Sauce

Instructions
 

Make the Special Sauce

  • Whisk mayonnaise, ketchup, mustard, relish, vinegar, onion powder, and paprika in a small bowl. Taste and adjust—sweet, tangy, creamy.

Prepare the Beef

  • In a bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Gently mix—overworking makes it dense.
  • Divide meat into 12 equal balls and flatten into thin patties slightly wider than your buns.

Cooking

  • Warm a large skillet or griddle over medium-high heat. Brush lightly with oil.
  • Sear patties 2 to 3 minutes per side until nicely browned. Add halved cheese slices to six patties in the final minute, cover briefly to melt.

Toast Buns

  • Split and toast slider buns face down in the pan for 30 seconds until golden.

Assemble

  • Spread special sauce on both bun halves, then layer with sauced bottom bun, patty, pickles, lettuce, onion, cheese-topped patty, and finish with the top bun.
  • Serve immediately.

Notes

Make larger sliders using three patties for a party centerpiece or use seasoned portobello slices as a vegetarian alternative. For a healthier option, swap mayo for Greek yogurt and use lean ground turkey.
