Preparation

  • Shred the cooked chicken.
  • In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, Greek yogurt (or sour cream), and chopped green onions. Stir until well blended and thickened.
  • Season the mixture with salt and pepper to taste.
  • Lay out a flour tortilla and spoon a generous amount of the buffalo chicken mixture onto it, spreading it evenly but leaving a small border around the edges.
  • Roll the tortilla tightly around the filling, keeping it snug but not overly tight.
  • Slice the rolled tortilla into 1-inch pieces to create pinwheels.
  • Serve immediately or chill in the refrigerator to firm up before serving.

Notes

Serve with fresh veggies and a creamy ranch dip. Pairs well with cold beverages for a snack or at gatherings. Can be made ahead and stored in the fridge.
