  • 1 pound Andouille Sausage Smoky sausage that gives the dish rich flavor; swap with chicken or turkey sausage for a healthier option.
  • 1 medium Onion Yellow or white onion adds sweetness.
  • 3 cloves Garlic Freshly minced for depth of flavor.
  • 2 cups Chicken Broth Use low-sodium broth to control seasoning.
  • 2 tablespoons Cajun Seasoning Pre-made blends or homemade with paprika, cayenne pepper, and garlic powder.
  • 2 tablespoons Olive Oil For sautéing; butter can be used for extra richness.
  • Salt and Pepper To taste.

Preparation

  • Rinse the green beans and trim the ends. Cut them into bite-sized pieces.
  • Slice the Andouille sausage into thin rounds.

Cooking

  • In a large pot over medium heat, add olive oil. Once hot, add the sliced onion and garlic. Cook until the onion is translucent, about 3-4 minutes.
  • Add the sausage to the pot and cook for another 5-7 minutes until browned.
  • Add the green beans, stirring well to coat them with the sausage and oil.
  • Pour in the chicken broth and Cajun seasoning. Bring to a boil, then reduce to a simmer.
  • Cover the pot and let it simmer for 15 minutes, stirring occasionally.
  • Before serving, taste and adjust seasoning with salt and pepper.

Notes

For a lighter version, use turkey sausage or plant-based alternatives. In summer, add fresh corn or diced tomatoes. Leftovers can be stored in an airtight container for up to three days.
