  • 1 large head large head of cauliflower (about 2-3 cups processed) Look for fresh, firm cauliflower with no brown spots.
  • 1 tablespoon olive oil or butter Use butter for an indulgent treat!
  • 1/4 teaspoon salt Enhances the natural flavors.
  • Pepper to taste A touch of black pepper adds depth.

Optional Ingredients

  • Fresh herbs (parsley, cilantro, green onions) Optional for garnish.
  • Lemon juice A squeeze adds brightness and helps elevate the flavors.

Preparation

  • Remove the leaves and stem from the cauliflower head and cut it into quarters.
  • Using a food processor, pulse the cauliflower florets in batches until they resemble rice grains. Alternatively, grate the cauliflower using a box grater.

Cooking

  • In a large skillet, heat the olive oil or butter over medium heat.
  • Add the riced cauliflower and sprinkle with salt and pepper. Sauté for 5-7 minutes, stirring occasionally until tender.
  • If desired, squeeze fresh lemon juice over the cauliflower rice and toss in your choice of herbs before serving.

Notes

For added color, toss in some diced bell peppers, peas, or carrots while sautéing. You can also stir in spices like cumin or chili powder to change the flavor profile. Store leftovers in an airtight container for up to 4 days.
