  • 1 teaspoon Garlic Powder Additional minced fresh garlic can be added for garlic lovers

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the zucchini into rounds or half-moons, aiming for about ½-inch thick for even cooking.
  • In a large bowl, toss the zucchini with olive oil, garlic powder, salt, and pepper until evenly coated.
  • Arrange the zucchini slices on a parchment-lined baking sheet in a single layer.
  • Sprinkle a generous layer of breadcrumbs over the zucchini, followed by the grated cheddar cheese.

Baking

  • Bake for 20-25 minutes or until the cheese is bubbly and golden, and the zucchini is fork-tender.
  • Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them back in a 350°F (175°C) oven for about 10 minutes until warm and crispy. You can prepare them in advance and leave unbaked in the fridge, baking them fresh just before serving.
