Instructions
 

Cooking the Bacon

  • In a large skillet over medium heat, cook the bacon, flipping once, until crispy, about 8 minutes. Transfer to a paper towel-lined plate.

Cooking the Chicken

  • Drain all but 2 tablespoons of bacon fat from the skillet. Season the chicken with salt and pepper.
  • Return the skillet to medium-high heat, add the chicken, and cook until golden and just cooked through, about 6 minutes per side.

Final Touches

  • Reduce heat to medium, sprinkle the chicken with ranch seasoning, and top with mozzarella.
  • Cover the skillet and cook until the cheese is melted and bubbly, about 5 minutes.
  • Crumble and sprinkle the bacon and chives on top before serving.

Notes

For extra flavor, consider drizzling ranch dressing over the top or serving with a side of dishes like salad or mashed potatoes. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for up to 2 months.
