  • Season your chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat.
  • Add the chicken to the skillet, cooking for about 6-7 minutes on each side, or until golden brown and cooked through.
  • Toss in the minced garlic during the last minute of cooking to infuse that amazing flavor.
  • Once the chicken is cooked, sprinkle the shredded cheese on top, covering the skillet with a lid until the cheese melts, about 2-3 minutes.
  • Remove the chicken from the skillet and let it rest for a minute. Slice it into strips.
  • Lay a tortilla flat, pile on the sliced chicken, a handful of fresh spinach, and any additional toppings of your choice.
  • Wrap it up tightly, slice in half, and enjoy immediately while your cheesy delight is still warm.

Notes

For a lighter option, use Greek yogurt instead of cheese. Swap in other veggies like bell peppers or mushrooms for additional flavor.
