  • 4 medium potatoes Russet or Yukon Gold, thinly sliced.
  • 1 small onion Chopped yellow onion adds sweetness.
  • 2 cloves garlic Fresh, adjust amount for desired flavor.
  • 2 cups shredded cheddar cheese A sharp and mild blend or Monterey Jack for variation.
  • 1 cup sour cream Greek yogurt can be a healthy alternative.
  • 1 teaspoon salt Adjust according to taste.
  • 1 teaspoon pepper Adjust according to taste.
  • 1 teaspoon paprika Adds a warm earthy flavor.
  • 1 tablespoon olive oil For sautéing beef and onions.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add olive oil. Sauté chopped onions for about 3 minutes until translucent, followed by minced garlic for 1 minute until fragrant.
  • Add ground beef to the skillet. Cook until browned, breaking it up as you go. Season with salt, pepper, and paprika.

Assembly

  • In a greased 9x13-inch baking dish, layer half of the sliced potatoes. Pour half of the sour cream over them, followed by the beef mixture.
  • Add the remaining potatoes and the rest of the sour cream. Top generously with shredded cheese.

Baking

  • Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Finishing Touches

  • Let it sit for 5–10 minutes before serving to help the layers set.

Notes

You can swap out potatoes for cauliflower or sweet potatoes. Add frozen peas or spinach for extra nutrients. Stir in diced jalapeños for a spicy kick.
