  • 2 cups hashbrowns Frozen or homemade; they provide that delightful crispy texture.
  • 1 can cream of mushroom soup Adds creaminess; can substitute with cream of chicken soup.
  • 1 cup shredded cheddar cheese Feel free to experiment with other cheeses.
  • 1/2 cup milk Almond milk or oat milk works as a dairy-free substitute.
  • to taste salt and pepper Essential for bringing all the flavors together.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, add the ground beef and diced onion. Cook until well-browned and the onions are soft, about 7-10 minutes. Season with salt and pepper.
  • In a large mixing bowl, combine the cooked beef and onion mixture with hashbrowns, cream of mushroom soup, milk, and half of the cheddar cheese. Stir until well combined.
  • Grease a 9×13-inch casserole dish and pour the mixture into it, spreading it evenly.
  • Sprinkle the remaining cheddar cheese over the top of the casserole.
  • Place in the oven and bake for 30-40 minutes, or until the cheese is bubbly and golden brown at the edges.
  • Allow the casserole to sit for about 5-10 minutes before serving.

Notes

Feel free to add veggies or spices for customization. This dish stores well in the fridge for 3-4 days or can be frozen for up to 2 months.
