Main Ingredients

  • 1 lb ground beef This gives our soup its meaty goodness and flavor.
  • 4 medium potatoes Peeled and diced; you can substitute with sweet potatoes for a sweeter flavor.
  • 1 onion Diced for that classic flavor base.
  • 2 cups beef broth Provides a rich, savory liquid; vegetable broth works too if you prefer.
  • 1 cup shredded cheddar cheese Adds creaminess and that irresistible cheesy flavor.
  • 1 cup milk Use whole milk for richness or opt for almond milk for a lighter version.
  • Salt and pepper To taste, enhancing the flavors of the dish.
  • Optional additions Chopped carrots or celery for extra veggies, and garlic for an aromatic boost.

Instructions

Cooking

  • In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks.
  • Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the diced potatoes and beef broth, bringing the mixture to a gentle simmer.
  • Cover and let it cook for 10-15 minutes, or until the potatoes are tender.
  • Reduce heat and stir in the milk and cheddar cheese, mixing until melted and creamy. Add salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if you wish!

Notes

This soup stores beautifully in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 2 months. Just reheat gently on the stove or in the microwave, adding a splash of milk for that creamy texture.
