Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and dice your potatoes into bite-sized pieces. Place them in a large mixing bowl.
  • Drizzle the olive oil over the potatoes and sprinkle the ranch seasoning. Toss until evenly coated.
  • Add the sliced smoked sausage to the potato mixture, and give it another gentle toss.
  • Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

Cooking

  • Place the dish in the preheated oven and bake for 35-40 minutes, or until the potatoes are golden and tender.
  • In the last 5 minutes of baking, sprinkle the shredded cheddar cheese over the top. Return to the oven until melted and bubbly.
  • Remove from the oven and sprinkle chopped green onions on top for garnish.
