  • 1 piece pre-made pie crust Store-bought works wonderfully for a quick meal.

Filling

  • 2 cups cherry tomatoes Look for vibrant, ripe tomatoes for the best flavor.
  • 1 cup ricotta cheese Can substitute with Greek yogurt for a lighter version.
  • 1 cup shredded mozzarella cheese Feel free to use any melting cheese you enjoy.
  • 1/2 cup fresh basil leaves Use parsley or spinach if basil isn't available.
  • 2 tablespoons olive oil Adds richness and helps with roasting.
  • to taste salt Essential for enhancing all those beautiful flavors.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Roll out your pie crust into a 9-inch tart pan, pressing it gently into the edges and trimming any excess.
  • In a bowl, combine ricotta cheese, half the mozzarella, salt, and pepper. Stir until creamy and smooth.
  • Spoon the cheese mixture into the tart crust, spreading it gently.
  • Slice your cherry tomatoes in half and arrange them cut-side up atop the cheese mixture. Drizzle with olive oil.
  • Sprinkle the remaining mozzarella over the top, followed by fresh basil leaves.

Baking

  • Bake in the preheated oven for 25–30 minutes, until the cheese bubbles and the crust is golden.
  • Once done, let it cool for a few minutes before slicing.

Serving

  • Slice, serve, and enjoy the tart while sharing with family and friends.

Notes

Herb Infusion: Experiment with different herbs. Vegetable Add-ins: Add sautéed zucchini or roasted peppers for additional veggies.
