Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry and season generously with salt and pepper on both sides.

Cooking

  • In a large oven-safe skillet, add chopped bacon over medium heat. Cook until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the drippings in the pan.
  • In the same skillet, add a drizzle of olive oil if necessary. Place the chicken skin-side down in the hot grease and sear until the skin is crispy, about 5 minutes.
  • Sprinkle minced garlic and fresh herbs over the chicken, then drizzle the crispy bacon over everything generously.
  • Transfer the skillet to the preheated oven and bake for about 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for 5 minutes before serving.

Notes

Helpful substitutions include swapping chicken thighs for breasts for a leaner option or serving over sautéed greens for a low-carb variant. For extra flavor, add a sprinkle of shredded cheese during the last five minutes of baking or root vegetables for a one-pan meal.
