  • In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery, stirring until they soften and the onion becomes translucent, about 5 minutes.
  • Pour in the chicken broth, and bring to a gentle boil.
  • Stir in the shredded chicken, oregano, thyme, salt, and pepper. Let it simmer for about 5 minutes to meld the flavors.
  • Gently add the tortellini to the pot. Cook according to package instructions, usually 3-5 minutes, until they float and are cooked through.
  • Stir in the fresh spinach during the last minute of cooking until wilted.
  • Taste and adjust the seasonings if needed.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze portions for quick, future meals. Allow soup to rest after cooking for improved flavor.
