  • 1 cup Mozzarella cheese, shredded Melty and gooey goodness; a sprinkle of Parmesan can elevate this even more.

Seasonings and Oil

  • 1 teaspoon Italian seasoning A blend of herbs that brings warmth and depth to each bite.
  • 1 tablespoon Olive oil To drizzle over the zucchini for a touch of richness.

Preparation

  • Preheat your oven to 400°F (200°C). Your kitchen is going to smell divine soon enough!
  • Wash the zucchinis and slice them in half lengthwise. Use a spoon to scoop out the seeds and create a hollow boat.
  • Drizzle the insides of the zucchini boats with olive oil, and season with salt and pepper.
  • Place them on a baking sheet cut-side up and bake for about 10 minutes, or until slightly softened.

Filling and Baking

  • While the zucchini bakes, mix the shredded chicken with marinara sauce and Italian seasoning in a bowl.
  • Once the zucchini have baked, remove them from the oven and fill them with the chicken mixture, heaping it generously into each boat.
  • Top with shredded mozzarella cheese, and return them to the oven for an additional 15 minutes or until the cheese is bubbly and golden.

Cooling and Serving

  • Let them cool for a few minutes before serving—this is where the anticipation builds!

Notes

Feel free to switch it up! Use cooked turkey or plant-based substitutes for vegetarian versions. Mix in spinach or bell peppers, or add red pepper flakes for a kick. If you have leftovers, store them in an airtight container for about 3 days in the fridge or freeze before baking.
