  • 8 oz Cream Cheese Adds richness and creaminess. Greek yogurt works well for a healthier twist.
  • 1 cup Shredded Cheese A blend of mozzarella and cheddar is ideal for a melty flavor.
  • 1 cup Spinach, chopped Fresh or frozen; adds nutrition and color.
  • 2 cloves Garlic, minced For aromatic flavor.
  • 1 cup Breadcrumbs For a crispy exterior.
  • 2 tablespoons Olive Oil To brush the breadcrumbs for crunch.
  • Salt and Pepper To enhance flavors.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cream cheese, shredded cheese, spinach, minced garlic, salt, and pepper. Stir until well blended.
  • Pound the chicken breasts to an even thickness using a meat mallet.
  • Lay each chicken breast flat and spoon a portion of the filling onto one end. Roll tightly, folding in the sides to seal.

Cooking

  • Place the roll ups seam-side down in a greased baking dish. Brush the tops with olive oil and sprinkle breadcrumbs over them.
  • Bake for 25 minutes, until cooked through and tops are crisp and golden.

Serving

  • Let them cool for a few minutes before slicing. Serve with a side salad, roasted vegetables, or creamy mashed potatoes.

Notes
