For the Noodles

  • 1 cup butter The star of the noodles; for a lighter option, you can swap some for olive oil.
  • 8 ounces egg noodles These are key for the perfect buttery finish, but you can use whole wheat or gluten-free noodles if desired.
  • 2 cloves garlic, minced For depth of flavor – the scent alone will elevate your kitchen experience.
  • 1/4 cup fresh parsley, chopped Adds brightness and color to the dish; feel free to substitute with dried herbs if needed.
  • 1 lemon For zest and juice.

Preparation

  • Pat the chicken breasts dry and season both sides generously with salt and pepper.

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side until perfectly golden brown and cooked through. Remove and let rest on a cutting board.

Cooking the Noodles

  • Meanwhile, bring a pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente. Drain well, reserving 1/2 cup of the pasta water.

Making the Butter Sauce

  • In the same skillet used for the chicken, reduce heat to medium and add the butter. Once melted, stir in the minced garlic and sauté for about 1 minute until fragrant.

Combining Ingredients

  • Add the drained noodles to the skillet with the garlic butter. Toss to incorporate. If the noodles seem dry, add a splash of the reserved pasta water.

Finishing Touches

  • Squeeze the juice of half the lemon over the noodles and toss in the chopped parsley for freshness.
  • Slice the chicken and serve it atop a bed of the buttered noodles, garnished with lemon zest and more parsley if desired.

Notes

Store leftovers in separate airtight containers in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of chicken broth or water to restore moisture.
