Main Ingredients

  • 2 pieces boneless, skinless chicken breasts Tender and juicy
  • 2 cups fresh spinach Substitute with kale or Swiss chard if desired.
  • 1 cup mushrooms (button or cremini) Feel free to experiment with wild mushrooms for an elevated flavor.
  • 2 cloves garlic, minced A must for flavor
  • 1 tablespoon olive oil Use coconut oil for a different flair.
  • Salt and pepper to taste Simple seasonings that will enhance everything.
  • 1/4 cup chicken broth You can also use white wine for a more decadent twist.
  • 1/2 teaspoon dried thyme (optional) For a hint of herby goodness.

Preparation

  • Pat the chicken breasts dry and season both sides generously with salt, pepper, and thyme.
  • In a large skillet, heat the olive oil over medium heat. The oil should shimmer when it’s ready.

Cooking

  • Add the seasoned chicken breasts to the skillet. Cook for about 5–6 minutes on each side until golden brown and cooked through. Transfer to a plate and cover to keep warm.
  • In the same skillet, toss in your sliced mushrooms and minced garlic. Cook for about 4–5 minutes until the mushrooms are soft.
  • Stir in the fresh spinach, allowing it to wilt for about 2–3 minutes.
  • Pour in the chicken broth, stirring to coat the veggies. Return the chicken to the pan and simmer for an additional minute or two to absorb the flavors.
  • Plate the chicken with the delightful spinach and mushroom mixture on top.

Notes

Serve over rice or creamy mashed potatoes. Store leftovers in an airtight container in the fridge for up to three days. Reheat gently on the stove or in the microwave, adding a splash of broth.
