  • 1/4 cup honey or maple syrup Adds gentle sweetness; reduce or omit for a sugar-free version.
  • 1 teaspoon vanilla extract Brightens flavors.
  • 1 pinch sea salt Balances the sweetness.

Preparation

  • In a large bowl, mash the ripe bananas until smooth with just a few small lumps for texture.
  • Add the peanut butter, honey or maple syrup, and vanilla. Stir until glossy and combined; the mixture should be thick and spreadable.
  • Mix in the oats and a pinch of sea salt. For a smoother bite, use a food processor to pulse into a finer crumb.
  • Scoop tablespoon-sized portions onto a parchment-lined tray and gently shape into bite-sized patties or balls.
  • Pop the tray into the fridge for 20 minutes so the bites firm up.

Dipping

  • While they chill, melt the chocolate chips in a double boiler or microwave in 20-second bursts, stirring until silky.
  • Dunk each chilled bite halfway into the melted chocolate, letting excess drip back into the bowl.
  • Place them back on the parchment, and if you like, sprinkle with crushed nuts, coconut, or a tiny pinch of sea salt.

Setting

  • Refrigerate until the chocolate is firm, about 10-15 minutes. Serve chilled or at cool room temperature.

Notes

For a fudgier interior, add cocoa powder to the banana mix. These can also be turned into bars by pressing the mixture into a lined pan and chilling.
