Preparation

  • In a large pot, over medium heat, add a splash of olive oil. Add the onions and garlic, and sauté for 2-3 minutes until fragrant.
  • Add the beef stew meat and brown it for approximately 5 minutes until caramelized.

Cooking

  • Pour in the broth and stir in the diced tomatoes.
  • Add the carrots, potatoes, celery, and herbs. Bring the mixture to a gentle boil, then reduce to a simmer.
  • Cover the pot and let it simmer for 45 minutes, stirring occasionally.

Finishing

  • Season with salt and pepper to taste. Serve hot, sharing around the table.
