Ingredients
  

For the Steak Marinade

  • 1 lb Steak (flank or sirloin) Tender cuts that marinate beautifully.
  • 2 tbsp Olive oil For marinating the steak and adding moisture to rice.
  • 2 tbsp Lime juice Brightens up the dish, balancing the richness of the steak.
  • 2 cloves Garlic, minced Adds depth and flavor; fresh is best, but powder can work in a pinch.
  • 1 tsp Salt Enhances all flavors.
  • 1/2 tsp Black pepper Enhances all flavors.

For the Bowl

  • 1 cup White or brown rice A comforting base; brown rice offers added nutrition.
  • 1/4 cup Fresh cilantro, chopped The star of the show and adds freshness.
  • 1 medium Avocado, diced Optional topping for added creaminess.
  • 1/2 cup Radishes, sliced Optional topping for added crunch.
  • 1/2 cup Pico de gallo Optional topping for extra freshness.

Preparation

  • In a bowl, combine olive oil, lime juice, minced garlic, salt, and pepper. Add your steak and let it marinate for at least 10 minutes.

Cooking the Rice

  • Rinse the rice under cold water, then combine it with water (or broth for extra flavor) in a pot. Bring to a boil, then cover and lower the heat to a simmer. Cook until fluffy and tender (about 15-20 minutes).

Cooking the Steak

  • While the rice is cooking, heat a skillet over medium-high heat. Remove the steak from the marinade and sear it for 3-4 minutes on each side for medium-rare.

Assembly

  • Once cooked to your liking, transfer the steak to a cutting board and let it rest for at least 5 minutes before slicing against the grain.
  • Fluff the rice and divide it between serving bowls. Top with sliced steak, fresh cilantro, and any additional toppings you desire. Drizzle with extra lime juice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze the assembled steaks and rice in portioned containers for easy meals. Reheat in the microwave and freshen it up with some extra lime and cilantro.
