Ingredients
  

Wet Ingredients

  • 1 cup pumpkin puree homemade or store-bought works perfectly
  • 1/2 cup vegetable oil or melted coconut oil for a subtle flavor change
  • 2 large eggs Ensure at room temperature for better mixing
  • 1 cup sugar brown sugar adds a richer taste

Dry Ingredients

  • 1 1/2 cups all-purpose flour whole wheat flour brings extra nutrition
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cloves can swap with allspice
  • 1/2 teaspoon salt

Cinnamon Swirl Mixture

  • 1/2 cup brown sugar for the cinnamon swirl
  • 1 tablespoon ground cinnamon for the swirl mixture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the pumpkin puree, vegetable oil, and sugar. Beat in the eggs until the mixture is smooth and creamy.
  • In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and spices (cinnamon, nutmeg, and cloves).
  • Gradually add the dry ingredients to your pumpkin mixture, mixing until just combined.
  • In a small bowl, combine brown sugar and the tablespoon of cinnamon to prepare the cinnamon swirl.

Assembly and Baking

  • Grease your mini loaf pan and fill each one about halfway with the pumpkin batter.
  • Sprinkle in a generous layer of the cinnamon swirl mixture.
  • Add more pumpkin batter on top of the swirl to cover it fully.
  • Using a butter knife, gently swirl the batter to combine the pumpkin with the cinnamon mixture.
  • Bake for 20-25 minutes until golden brown and a toothpick inserted in the center comes out clean.

Cooling

  • Let the mini loaves cool in the pans for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

These mini loaves are perfect for cozy gatherings and can be stored in an airtight container at room temperature for up to three days. For longer storage, wrap them well and freeze.
