  • 2 cups Diced tomatoes (canned or fresh) Foundation of the sauce.
  • 1 cup Chicken broth Low-sodium is a great choice for flavor control.
  • 1 cup Red wine Enhances the flavor of the sauce; substitute with vegetable broth for a non-alcoholic version.
  • 2 tablespoons Olive oil For sautéing.
  • to taste Salt and pepper Essential for seasoning.
  • 1 tablespoon Fresh basil Enhances the flavor; dried herbs are fine too.
  • 1 tablespoon Fresh oregano Adds extra flavor.

Preparation

  • In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper, then sear until golden brown on both sides, about 5 minutes per side.
  • Remove the chicken and set aside. Add chopped onion and bell peppers to the skillet. Sauté until softened, about 4-5 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Pour in the red wine and let it reduce by half. Add in diced tomatoes and chicken broth, stirring to combine.
  • Add the chicken back into the skillet along with fresh basil and oregano. Cover the skillet, reduce the heat to low, and let simmer for about 30-35 minutes.
  • Check for doneness, ensuring the chicken is cooked through and tender. Adjust seasoning as desired.
  • Remove from heat and let it rest for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. It freezes beautifully; let it cool completely before transferring to a freezer-safe container. For reheating, thaw in the fridge overnight and warm on the stove until heated through.
