Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the beef with salt and pepper and sear the roast on all sides until browned (about 4-5 minutes per side).
  • In the same skillet, add chopped onions and garlic and sauté until the onions are translucent (about 3-4 minutes).
  • Place the seared roast in your slow cooker and surround it with the sautéed onions and garlic, sliced carrots, and diced potatoes.
  • In a separate bowl, mix beef broth, Worcestershire sauce, and a sprinkle of fresh herbs, then pour this mixture over the roast and veggies.

Cooking

  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until the meat is tender and falls apart easily.
  • Once done, let the roast rest for a few minutes before slicing.
  • Serve with the vegetables and a sprinkle of fresh herbs on top.

Notes

Consider adding a pinch of red pepper flakes for a mild kick, or swapping in sweet potatoes for a festive flavor during the holidays.
