Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and stir occasionally until soft and translucent, about 5 minutes.
  • Add the minced garlic and sauté for an additional minute.

Cooking

  • Pour in the canned tomatoes and broth, stirring well.
  • Add the sugar, salt, and pepper, and let the soup simmer uncovered for about 15 minutes.
  • Blend the soup using an immersion blender or by transferring it carefully to a traditional blender.
  • Add the fresh basil just before serving and stir well.
  • Taste and adjust seasoning as needed.

Notes

For a creamy twist, add heavy cream or coconut milk; for a spicy kick, add red pepper flakes. You can also include vegetables like carrots or bell peppers for added nutrition.
