Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine 2 cups of corn, 2 large eggs, 1 cup of milk, and ¼ cup of melted butter.
  • Whisk together until well-blended.
  • Stir in 1 cup of sugar, 1 cup of cornmeal, and a pinch of salt.
  • Pour the mixture into a greased baking dish, making a beautiful, even layer.
  • Bake in the preheated oven for about 45 minutes, or until golden brown and a toothpick comes out clean.
  • Let it cool for a few moments before serving.

Notes

Feel free to customize your corn pudding by adding cheese, spices, green onions, or herbs. Leftovers keep well in the fridge for up to 3 days and can be frozen for later use.
