  • 2 cups Cottage Cheese Adds a creamy texture; can use low-fat or full-fat.
  • 1/4 cup Nutritional Yeast Adds a cheesy flavor without the calories.
  • 1 teaspoon Salt To enhance all those wonderful flavors.
  • 1/2 teaspoon Pepper A dash for a bit of zing.

Vegetables

  • 2 cups Spinach (fresh) Brings both color and nutrition; frozen is an option but squeeze out excess water.
  • 1 cup Bell Peppers (diced) Sweet and crunchy addition.
  • 1 small Onion (diced) For savory depth of flavor.

Optional Topping

  • 1/2 cup Grated Cheese Optional, for an indulgent finish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the eggs, cottage cheese, nutritional yeast, salt, and pepper. Stir until well mixed.
  • Gently fold in the spinach, bell peppers, and onion until evenly distributed.
  • Lightly grease a 9x9-inch baking dish with cooking spray or olive oil.
  • Pour the mixture into the greased baking dish. Sprinkle with grated cheese on top if desired.

Baking

  • Place in the preheated oven and bake for 20-25 minutes, until the eggs are set and the top is golden brown.
  • Let cool for a few minutes before slicing.

Notes

For a Mexican twist, add black beans and corn. Fresh herbs can elevate flavors beautifully.
