Main Ingredients

  • 2 pieces Chicken Breasts or thighs for juiciness
  • 1 tablespoon Cajun Seasoning make your own or use store-bought
  • to taste Salt and Pepper
  • 2 tablespoons Olive Oil for sautéing
  • 1 medium Onion diced; adds sweetness
  • 3 cloves Garlic minced; for depth of flavor
  • 1 cup Heavy Cream for that rich, indulgent sauce; swap with Greek yogurt for a tangy twist
  • ¾ cup Chicken Broth low-sodium, to control salt levels
  • 1 cup Fresh Spinach totally optional but adds a pop of color and nutrition
  • to taste Fresh Parsley for garnish; brings brightness to the dish

Instructions

Preparation

  • Season the Chicken: Begin by seasoning both sides of the chicken breasts with salt, pepper, and Cajun seasoning. You’ll want it to be well-coated for the most flavor.
  • Sear the Chicken: Heat olive oil in a large skillet over medium heat. Once hot, carefully add the chicken and sear for about 5-7 minutes on each side until golden brown. Set it aside on a plate once done.
  • Sauté the Aromatics: In the same skillet, add the diced onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another minute, but don’t let it burn!
  • Create the Creamy Sauce: Pour in the chicken broth, scraping the bottom of the skillet to capture all those delectable brown bits. Let it reduce for about 2-3 minutes. Then, slowly stir in the heavy cream.
  • Return the Chicken: Nestle the seared chicken back into the skillet, allowing it to cook through for another 5-7 minutes.
  • Add Spinach and Finish: Stir in the fresh spinach and let it wilt in the sauce.
  • Serve and Enjoy: Scoop the creamy Cajun chicken onto plates, drenching it with that rich sauce, and sprinkle fresh parsley on top!

Notes

Healthier Swap: For a lighter option, substitute heavy cream with half-and-half or coconut milk. Seasonal Variation: Add seasonal vegetables like mushrooms or bell peppers for a creative twist. Spice Adjust: If you prefer less heat, reduce the Cajun seasoning or use a milder blend.
