  • 3 cloves Garlic, minced Provides a fragrant kick.
  • 1 piece Bell Pepper, chopped For sweetness and color.
  • 1 piece Onion, chopped Adds savory base flavor.
  • 1/2 cup Parmesan Cheese, grated For added creaminess and flavor.

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken: Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
  • Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for about 5-7 minutes on each side, until cooked through and golden. Remove from skillet and let it rest before slicing.
  • Cook the Veggies: In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute.
  • Create the Sauce: Pour in the chicken broth, stirring to deglaze the pan. Bring it to a gentle simmer.
  • Add Cream and Cheese: Lower heat and slowly add the heavy cream. Stir to combine, then mix in the Parmesan cheese until melted.
  • Combine Everything: Slice the rested chicken and return it to the skillet along with the cooked pasta. Toss together until well-coated with the sauce and adjust seasoning.
  • Serve: Garnish with extra Parmesan and fresh parsley if desired. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm it up in a skillet over medium heat, adding a splash of cream. This pasta freezes well for up to 3 months.
