  • 2 cloves garlic, minced The fragrant star of the show.
  • 2 cups carrots, sliced Bright and vibrant, adding color and sweetness.
  • 2 cups celery, diced A crunch factor that balances the creaminess.
  • 1 pound boneless, skinless chicken breast The hearty protein element.
  • 4 cups chicken broth The soul of our soup; homemade is preferred.
  • 1 cup heavy cream For the indulgent and creamy texture.
  • 1 pound gnocchi The fluffy dumplings that make this dish special.
  • 2 cups fresh spinach Add just before serving for a pop of color.
  • Salt and pepper to taste Essential for bringing all the flavors together.
  • Fresh parsley, chopped (for garnish) For that final touch of freshness.

Instructions

Sauté the Vegetables

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, sautéing until it turns translucent and fragrant. Toss in the minced garlic and let it bubble away for just a minute.

Add the Carrots and Celery

  • Stir in the sliced carrots and diced celery. Cook for about 5 minutes until they soften slightly.

Cook the Chicken

  • Add the chicken breast to the pot and pour in the chicken broth. Bring it to a gentle boil, then reduce the heat to low and simmer for 15 minutes.

Shred the Chicken

  • Remove the chicken, shred it using two forks, and return it to the pot.

Introduce the Cream and Gnocchi

  • Pour in the heavy cream and stir until well mixed. Add the gnocchi, letting them cook for about 3-5 minutes until they float to the surface.

Add the Spinach

  • Gently fold in the fresh spinach, stirring until it wilts and integrates into the soup.

Season and Serve

  • Taste and season the soup with salt and pepper as desired. Serve hot, garnished with fresh parsley.

Notes

Feel free to customize the soup with vegetable swaps or herb infusions to suit your taste. It's excellent with crusty bread or a green salad.
