Preparation

  • Begin by boiling the pasta in salted water according to package instructions. Drain and set aside, reserving a bit of the pasta water.
  • In a large skillet over medium heat, melt the butter until bubbly.
  • Add minced garlic to the butter, stirring for about 1 minute or until it turns golden and fragrant.

Cooking

  • Slowly whisk in the heavy cream and grated Parmesan cheese, stirring until the cheese melts into a smooth sauce.
  • Add the cooked pasta and spinach to the skillet, tossing everything together. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  • Finish by seasoning with salt and pepper to taste, letting the pasta soak up the sauce for a minute or two before serving.
