Ingredients

Main Ingredients

  • 1 pound ground beef Choose lean for a lighter option or go for extra flavor with more fat.
  • 1 medium onion, diced Can substitute with shallots for a more subtle flavor.
  • 2 cloves garlic, minced Fresh garlic is essential for aroma.
  • 3 large potatoes, peeled and diced Russets or Yukon Golds provide a creamy texture.
  • 4 cups beef broth Homemade is best, but store-bought works fine.
  • 1 cup heavy cream Use half-and-half or non-dairy milk for a lighter version.
  • Salt and pepper to taste Season generously.
  • Optional toppings: shredded cheese, chopped green onions, or crispy bacon For that delightful finishing touch.

Instructions

Cooking Steps

  • Heat a large pot over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  • Drain excess fat if necessary, then stir in the diced onion and minced garlic. Cook for another 2-3 minutes until the onions soften.
  • Add the diced potatoes and stir to coat them in the flavors of the beef and onions.
  • Slowly add the beef broth, bringing everything to a simmer.
  • Let the soup simmer for about 20 minutes, or until the potatoes are tender.
  • Reduce the heat and stir in the heavy cream.
  • Taste and adjust the seasoning with salt and pepper.
  • Ladle the soup into bowls, adding your favorite toppings.

Notes

For storage, keep leftovers in an airtight container for up to 3 days. Freeze for longer storage. Reheat gently on the stove and add broth or cream if it thickens too much.
