Ingredients

Pasta

  • 8 ounces elbow macaroni A classic choice, but feel free to swap with any pasta you adore (e.g., shells or rotini).

Cheese Sauce

  • 2 tablespoons butter Unsalted is best for controlling the flavor, but salted will work in a pinch.
  • 2 tablespoons all-purpose flour Essential for thickening your cheese sauce.
  • 2 cups milk Whole milk gives the richest flavor, but 2% or dairy alternatives will still work.
  • 2 cups shredded sharp cheddar cheese For gooey, melty goodness. Mix with Monterey Jack or Gruyère for added flavor.
  • 1 teaspoon garlic powder Enhances the savory depth; fresh garlic is also a delightful option.
  • 1/2 teaspoon salt Adjust to taste, especially if using salted cheese.
  • 1/2 teaspoon pepper Adjust to taste.

Optional Toppings

  • Breadcrumbs For added texture.
  • Parmesan cheese For extra flavor.
  • Paprika For added flair.

Instructions

Cooking the Pasta

  • In a large pot of salted boiling water, cook the elbow macaroni according to the package directions until al dente. Drain and set aside.

Making the Roux

  • In the same pot over medium heat, melt the butter. Sprinkle in the flour and whisk continuously for 1-2 minutes until it forms a smooth paste, known as a roux.

Adding Milk

  • Gradually pour in the milk, continuing to whisk to avoid lumps. Keep whisking until the mixture thickens slightly.

Incorporating Cheese

  • Remove the pot from heat and stir in the shredded cheese. Add the garlic powder, salt, and pepper, mixing until fully melted and creamy.

Combining with Pasta

  • Gently fold the cooked pasta into the cheese sauce, ensuring every piece is coated.

Serving

  • Dish out your creamy mac & cheese and savor the warm comfort it brings.

Notes

For a healthier option, swap half of the cheese with Greek yogurt or cottage cheese. Add sautéed veggies for a colorful boost. Try mixing in cooked bacon or pulled chicken for a heartier meal.
