  • 4 pieces boneless, skinless chicken breasts Can swap with thighs for a richer flavor
  • 3 tablespoons olive oil or butter Unsalted butter adds depth
  • 4 cloves garlic, minced Add more for punch
  • 1 cup heavy cream Substitute with half-and-half for a lighter version
  • 1 cup grated Parmesan cheese Freshly grated is ideal
  • Salt and pepper to taste
  • Fresh parsley, chopped For garnishing

Preparation

  • Season both sides of the chicken breasts with salt and pepper. Allow them to sit for a few minutes to absorb the spices.
  • In a large skillet over medium heat, add olive oil or butter. Let it melt and warm up.

Cooking

  • Carefully place the seasoned chicken in the skillet and let it sear for about 6-7 minutes on each side until golden brown.
  • Remove the chicken and set it aside. In the same pan, add minced garlic and stir constantly for about 30 seconds until fragrant.
  • Pour in the heavy cream, scraping up any bits from the bottom. Stir in Parmesan cheese and let it simmer for 2-3 minutes until thickened.
  • Return the chicken to the pan and coat it generously with the sauce. Let them mingle for about 5 minutes.
  • Sprinkle with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat gently in a skillet, adding a splash of cream to revive the sauce. Can freeze the chicken in sauce for up to 3 months.
