  • In a large pot over medium heat, add a splash of olive oil. Once hot, sauté the chopped onion until translucent, about 3 minutes.
  • Add the Italian sausage, break it up with a spoon, and cook until browned.
  • Stir in the minced garlic and sauté for another minute until fragrant.
  • Carefully add the chicken broth, scraping the bottom of the pot for any delicious, caramelized bits.
  • Add Italian seasoning, salt, and pepper to taste. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes.
  • Gently stir in the heavy cream and Parmesan cheese until melted. Add the spinach and let it wilt for 2-3 minutes.
  • Taste and adjust seasoning if necessary, then serve hot.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months. Reheat gently on the stove. For variations, consider adding red pepper flakes for spice or swapping out the sausage for a vegetarian option.
