  • 1 medium onion (finely chopped; adds depth)

  • 4 cups vegetable or chicken broth (homemade for extra richness)
  • 1 cup heavy cream (for indulgence; substitute Greek yogurt for a lighter option)
  • Salt and pepper (to taste)
  • 2 tbsp olive oil or butter (for sautéing; butter adds a creamy richness)
  • Fresh chives or parsley (for garnish; adds a refreshing pop)

Preparation

  • In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  • Stir in the minced garlic, cooking for an additional minute until fragrant.
  • Add the diced potatoes to the pot, stirring them well with the onion and garlic mixture.
  • Pour the broth over the potatoes and bring to a boil. Cover and reduce the heat to a simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  • Once the potatoes are perfectly cooked, use an immersion blender to puree the soup directly in the pot. For a chunkier texture, blend only half of the soup, or mash the potatoes lightly.
  • Add the heavy cream (or Greek yogurt) and season with salt and pepper to taste. Allow the soup to simmer for an additional few minutes.
  • Ladle the soup into bowls and sprinkle fresh chives or parsley on top.

Notes

For healthier swaps, replace the heavy cream with coconut milk or cauliflower puree. You can also add seasonal vegetables for enhanced flavor.
