Preparation

  • In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, add the Italian sausage. Cook until browned, stirring to break it apart, about 5–7 minutes.
  • Once the sausage is fully cooked, add the diced onion and continue cooking until the onion is soft and translucent, approximately 3–4 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Pour in the heavy cream and chicken broth, stirring well. Let it simmer for about 3–5 minutes or until it thickens slightly.
  • Stir in the grated Parmesan cheese, mixing until completely melted and combined.
  • Gently fold in the cooked rigatoni, ensuring every piece is coated in that luscious sauce. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, this dish freezes beautifully. Reheat gently on the stovetop or microwave, adding a splash of cream or broth to restore its creamy texture. Consider adding zucchini noodles or whole wheat rigatoni for a healthier option or sun-dried tomatoes for extra flavor.
