  • 8 oz Pasta (penne or fettuccine) The perfect vessel for that creamy sauce.
  • 1 lb Smoked sausage Use chicken, pork, or a vegan option.
  • 1 cup Heavy cream Or half-and-half for a lighter substitute.
  • 2 cloves Garlic Freshly minced.
  • 1 medium Onion Sweet and tender when sautéed.
  • 1 cup Parmesan cheese Freshly grated; nutritional yeast can be used for a vegan option.
  • 2 cups Spinach Adds color and nutrition; can substitute with kale or broccoli.
  • 2 tbsp Olive oil For sautéing.
  • to taste Seasoning (Italian herbs, salt, and pepper) To enhance flavors.

Preparation

  • Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced smoked sausage and cook until browned and crispy, about 5-7 minutes.
  • Toss in the minced garlic and chopped onion, cooking until the onion is translucent.
  • Pour in the heavy cream, stirring to combine. Let it bubble gently before adding the grated Parmesan cheese. Stir constantly until the cheese melts and the sauce is creamy and smooth.
  • Add the fresh spinach into the sauce and let it wilt. Then, combine this mixture with the cooked pasta, ensuring every strand is coated.
  • Taste and adjust seasoning with salt, pepper, and Italian herbs.
  • Garnish with additional Parmesan and a sprinkle of fresh herbs if desired. Serve immediately.

Notes

This dish is best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to three days. For leftovers, reheat in a skillet with a splash of cream or water.
