Preparation

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  • Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, just until it turns fragrant and golden, but be careful not to burn it.
  • Add the Tomatoes: Pour in the crushed tomatoes along with dried oregano. Stir well and bring to a simmer, allowing it to cook for about 5 minutes to meld the flavors.
  • Cream it Up: Lower the heat, then pour in the heavy cream, stirring steadily until the sauce is creamy and well combined. If it’s too thick, add a splash of reserved pasta water to achieve your desired consistency.
  • Combine: Add the cooked pasta to the skillet, tossing it in the creamy sauce. Season with salt and pepper to taste, and let it cook for another 2-3 minutes to allow the pasta to soak up some of the sauce.
  • Serve: Dish out the pasta onto plates and finish with fresh basil. Feel free to sprinkle some grated Parmesan or nutritional yeast if you desire!
